Rate the Recipe Results!

 

 

The votes have been tallied and what a competition this turned out to be! At one stage the Agri Aware computer was at risk of imploding such was the volume of votes you all e-mailed in!

 

It was neck to neck between our five finalists right up to the closing stages of our Rate the Recipe challenge but cooking up a winning storm around the kitchens of Ireland was Susie Rice's ‘Summer Fruit Ripple'.

 

A fifth class student from Abbeydorney National School, Tralee, Co. Kerry, Susie will get the chance to perfect her chefing skills at a cookery session with a Bord Bia representative.

 

Congratulations Susie and don't be too surprised this summer if your classmates start turning up to your door every lunchtime!!

Summer Fruit Ripple

Ingredients for 4 Servings

250g (8oz) strawberries
125g (4oz) raspberries
4tbsp fresh orange juice
275ml natural yoghurt
275ml double cream
2tbsp runny honey
2tbsp icing sugar (sieved)

1.    Wash the fruit. Keep a bit aside to decorate later. Cut strawberries into quarters.
2.    Place orange juice, icing sugar, and half of the fruit into the processor. Put the lid on securely and blend to make a smooth puree.
3.    Sieve blended fruit into a mixing bowl to separate seeds and fruit pulp. Use wooden spoon to press liquid through.
4.    Stir rest of strawberries, blueberries and raspberries into the fruit puree with a metal spoon.
5.    Whip the cream in a large bowl.
6.    Fold the yoghurt, honey and half of the fruit mixture into the cream. Layer the marbled cream mixture with the rest of the fruit mixture, in serving glasses.
